Gruyère AOC Pancakes

 

Ingredients

200g strong Gruyère AOC
1.5dl milk
75g flour
3 eggs
1 large leek
4 rashers of bacon
Butter to fry
Salt

Preparation

Stir the milk and flour together until creamy. Stir in the eggs and salt. Leave to settle for 30 minutes.

Halve the leeks lengthways and separate off individual strips. Boil in plenty of salty water for 2 to 3 minutes. Remove with a slotted spoon and plunge in ice-cold water. Allow to dry on kitchen paper.

Cut the Gruyère AOC into 8 pieces von ca. 5x5x1cm. Cut the bacon into strips 5cm wide. Wrap the bacon and leek around the cheese pieces.

Mettle a little butter in a small frying pan. Use the dough to fry 8 thin pancakes from the. Place one of the cheese packets on each pancake. Pull up the sides and roll up.

Fry the pancakes in butter on both sides for approximately 10 minutes on medium heat. Serve with salad.
